That is fine. Just connect -in to 0v on both inputs and shield on your 3.5mm Jack and Jack tip to left +in and Jack ring to tight +in and adjust trimpots for correct VU meter level. If you need more gain if 3.5mm output is low let me know.

Yes that will work. The XLR will have audio on pin 2 and 0v on pin 3 & pin 1 so will work as quasi balanced output so will still do noise cancelling

I really need more gain. I have the option, that you said, change the Vu Meter, or use another pcb
and have gain and a good cancelling noise.

Yes using the stereolab pcb as the unbalanced to balanced XLR outs with gain is perfect and yes 10 pin ribbon cable to the VU2 pcb will take balanced audio and power to it so only needs meter wiring to work. Also means less trimpot gain is needed on the vu2 pcb.
